A Whole New Meaning to “Local Dining” at Bistro Lokal
‘Local’ is a noun defined as “a local person or thing”.
That’s according to the Merriam-Webster Dictionary. (Not as amusing a presentation of a word as when comedian Ismo does it, I know. That definition is not much help either, now that I overthought it. *tee hee )
When you think about the word ‘local’, you instantly think about things that one grew up with, are accustomed to so much that it might seem very basic, and know the ins and outs of. =)
At Chef Miko Dy’s resto, the newly opened, Bistro Lokal, diners are introduced to a whole new meaning of highland local … and it’s going to be one hell of a razzle dazzle presentation, I promise you. (Cue Vivaldi‘s Concerto No.4 in F minor “Winter”, Chef’s Table, Netflix docu series’ intro theme.)

When my better half and I were invited (along with Buhay Pinoy TV’s Ms. Patty; so nice to meet you and your crew, Ms. Patty!) for a sneak peek of the bistro that shines bright like a diamond (especially at night =b) on Magsaysay Ave, I was given free rein to be my usual usi, eatsploring self.
In actuality, it’s a sit down restaurant/fine dining style with a degustation of more than 10 dishes (Think Mama’s Table. Yaaaz! We have two in food trip city now. But this one’s right in the central business district, and not private dining.) if you choose to go with either Set A or Set B.
You can also go a la carte, and pick and match all the little bites that strike your fancy. NOTE please, that sets are good for one person only, as what dining a la molecular gastronomy is. Not to worry, the mains are a la carte size. ^^,

Red rice sourdough with bistro churned butter. Bread that’s so enjoyable to eat from crust to the inside. ❤

Bistro Iced Tea and Preserved Sagada Orange Spritz
There are quite a number of refreshments to choose from at Bistro Lokal; all of them with such interesting names, I’d want to go on a drinking binge to see what they’re like. Race and I got the *sip ahh effect from both our choice of libations; at the same time, were put in a dilemma of nursing our drink, taking little refreshing sips; or do we finish this off so we can get another glass.

Preserved Sagada orange spritz and Bistro iced tea – Lemon grass, kamote leaf tea with mint, dayap, panucha. *sip ahh!
I, at this point, will leave you with photos of the small taste explosions Chef Miko had us sample. At Bistro Lokal, the waitstaff are rigorously trained and knowledgeable of every minute detail about the food they serve, you’re sure to be treated to a dinner and a show when you dine here. I definitely would like you to experience that introduction full of flair to a new meaning of ‘local’ for yourself, dear foodie reader. (“,)
Just know that every ingredient that’s used in putting together the dishes on the tasting menu are sourced locally as well as the freshest they can be. (I particularly liked the micro greens. Eeiii, the little pechay, so cute.) #SupportLocal
And if you’ve ever dined at Zola, Drop Out, Recess, The Terminal, or any of The Camp restos, your palate and this Chef are acquainted, one way or the other. At his baby of a food tasting joint, you’re bound to get everything that is Miko Dy in one sitting. =D Taste and savor each ingredient, well thought of and served in such a way that a transcendental flavor profile comes together beautifully in your mouth.

Everything was a taste explosion so it’s sort of hard to pick faves … sort of. The tinuno with kimchi rice is my favorite and the dinuguan. The sayote sorbet. =b

Hello there, Anon! Good plan. *hihi Though mains in the sets are a ala carte size and with the many small bites, it might just be enough. Just today, Bistro Lokal has added crispy pata to their menu, good for 4 to 5. Limited supplies per day.
