Pancake House: House of Hotcakes and A Smorgasbord of Other Yummy Stuff
If there’s one word I would use to describe what restaurants have to be these days, the word I’d pick would be “diverse”. As per Wikipedia, diversification is a marketing strategy that allows for a business to increase sales volume. This would either be through new products and/or expanding to new markets.
Inasmuch as the biggest goal that the best food establishments should have would be to make other people happy through their offering of delicious dishes, they have to bring the bacon home to their families, too. Having something for everyone in their target market is a great way to accomplish these (what should be the) top (two) objectives.

Let’s be honest, we’re living in a third world country (and there’s nothing bad about being that. Someone – Grandma Moses/Eleanor Roosevelt/ even Marilyn Monroe is joining the fray =b – did say, life is what we make it. *hihi ), so while we’re doing what we can to survive in this world, Baguio food scene entrepreneurs are also doing what they can to succeed in the industry. (It might be a little too much to ask them to stick to one cuisine unless they’ve already got a brand that’s uber established. Or if they do it like Amare; complimenti, Amare! Come to think of it, I’ve never really seen Cantinetta packed and that isn’t only due to the price of the dishes they have.)
One of the restaurants in Baguio that has a smorgasbord of dishes for the residents of this city and its visitors is Pancake House. Yes, pancakes are a given here but they’ll surprise you with what else there is on their menu.

Dining at Pancake House (Petron Gas Station, their first branch in the City of Pines). Whoa! Five years ago! Tempus fugit. Shout out to Paul! Shrimp-mango salad, one of P3’s favorites. As for the shakes, they were still in short glasses in 2008. See how they’ve grown taller in 2013.

Dining at (the then newly opened) Pancake House CJH branch. We had crispy bacon and asparagus and mushroom tagliatelle, and grilled maple chicken on fruity salad. For drinks, kiwi shake and soda =)

Rootbeer float and grape-apple shake for refreshments. (The kiwi shake looks the same, just switch out the colors to green. *hee)
We start off our meal with warm bacon potato salad (“,)

Don’t let the smell of the salad dressing put you off. It does smell like bagoong/fish paste but the salad is delish! I could have only this and I’d be pleased as punch. (“,)

Note that this dish’s name is literal. There IS only ONE crispy strip of bacon on the pasta. A good plate of pasta, nonetheless. Ahh, creamy juicy pieces of shiitake mushroom. *contented sigh

Would you believe this is MY order? ^^, It’s rare that Race goes for the pasta. In the background, small bottles of cabernet sauvignon and chardonnay. For P195, you could be washing your main course with this. I’m happy with the texture of the rice that’s making me reminiscent of biryarni rice for the spiciness. The chicken comes with a garlic dip (They seem to have forgotten my lemon wedge. Anyhoo.), if it’s too bland for you. Me, I was good with the chicken and the rice. *nomnomnom

And still Pancake House has more to offer. Key lime pancakes? Yes, way! As well as packed Pancake House favorites like beef tapa, spaghetti sauce, country sausage, etc. Now, that’s diversification!
X marks Pancake House for good food in Baguio. Want pancakes? Even red velvet style ones? Not just … but also salads, pasta, brown rice dishes, hearty main courses, snacks; there’s something for everyone in this house!
Service (07/29/013 visit): Our attendant fawned over us throughout our meal. I was so touched too that they put my leftovers (I didn’t finish my brown rice meal. Got so full from the potato salad *burp) in a proper container. Yes, it was just a common microwavable container but it made me feel so taken care of.
