Dalikan Food Terminal: Dali!!! Maykan, Mangan!
First and foremost, let me greet you, my foodie friends, a prosperous 2019! … Naturally, one that’s packed with memorably delicious eats … even if it’s not a holiday. *hihi
At the first ever Kekkan Festival in La Trinidad that happened a couple weeks back, Race and I met Chef Harry, one in the panel of judges to find the main dish and dessert that best represented the municipality. =)
X+1 got to see him among the movers and shakers in the food industry check out the various dishes that were laid in front of us, judging it for originality, use of local ingredients, taste, and so on.
A couple days later, we were at his restaurant soft opening with Sir Kurt and his Gawis family, and the Dean team. At the straightforward eating place, well away from the tourist crowds and their personal vehicles at Tamawan Village, we got to check out Chef Harry’s food stylings. \m/
UPDATE 02/05/2020: Dalikan has moved to Dominican Road, the building at the foot of the staircase going up to Lourdes Grotto.
We might have arrived too early that day (#excited) so we munched on patupat for starters while Chef got busy in the kitchen. In a basket, we took it like rice cake till you drop and I tell you, you really will eat and eat as much as you can. I’m not a big rice cake/rice dessert person to say the least. But this got me peeling away at the banana leaf wrappers to get a bite out of the perfect consistency, nicely flavored ( I didn’t need a sugar dip) suman. ^^, Coupled with barako, Sir Kurt and his brood, X+1 were already satisfied.
Since Chef was serving a buffet for the first day operations, we then had salad, sausage … that went so well with Dalikan bugnay wine, pinikpikan (Of course!), bulalo (Of course, yes!), scrumptious flavorful Asian dishes like chicken curry and a curry-like pasta, etc.
This food stop’s bulalo has got to be the best bulalo ever! You can really taste how it was boiling, simmering, softening in the wee hours of the morning. Every part that was fatty, somehow took on the form, feel, and taste of marrow. ❤ ❤ ❤ What. Sorcery. Is. This?
For dessert, more patupat … and Panlaok desserts like brownies and cupcakes. Beside the water “dispenser”, there’s a free drink at Dalikan that can also double up as dessert. Hello, rice wine. Sweet and addicting, we almost squeezed the rice with the ladle dry, just to “igib” every drop of tapey from the clay pot. =b

Ever have a dish haunt you like your conscience when you did something naughty? *tahaha The whole holiday week, I kid you not, I was thinking of nothing but the Dalikan beef shank soup. The monsoon and the last hurrah typhoon making the day cloudy gloomy didn’t help.
Then it’s a new dawn, it’s a new day – a sunny day in the new year: January 2.
How to Eat at Dalikan – Taste Asia

Come as early as you can because the dishes this eatery has to offer for the day gets sold out fast. (They open their doors as early as 7:00 a.m. with staples like pinikpikan, etag, baka, watwat and new additions daily.) (“,)
Maykan
Wash your hands. Ready your sauces; lots of fun choices at this joint. They have Farmer’s Daughter‘s amusingly named hot sauces, and don’t miss the inhouse chili garlic, too. You won’t have to wait long because this Food Terminal serves fast food, Cordilleran fast food. =D
Mangan
Lumdang – Tasty, filling, with etag pieces and garlic bits that takes this humble bowl of black beans to a whole ‘nother level.
Watwat – Don’t judge this unassuming board of pork chunks. True to watwat form, every piece is tender and oh so yummeh. If ever you need more flavor in spite of what it already has, dip in tapey bits and the salt/sugar mix. Either way, this dish really sings. Laaaaa! ♫ ♫
Etag – Lunch and a show at Dalikan where the etag is heated up with a blowtorch … a wittle blowtorch. Wee! Packed to go, the smokey aroma of the meat tickled our noses all the way home. Though I’m not a fan of tapa consistency meat, this smoked meat is a-okay with me. It’s like a flavorful protein bubble gum. *heehaha I really love it. Every nook and cranny of it is salty zingy. Perfect for carb, in the way of rice, stacking because a little goes a long way. (Long live, etag! Good thing, Chef Harry’s resto has big servings of rice, too.)

With regard to restos serving watwat, I’m sure there are a great number of eating places that have watwat here in Baguio … just that we haven’t gotten to them =b … Dalikan does it really well though; it’s so satisfying to eat.

Wow those Corilleran dishes are mouthwatering. What is Dalikan Taste Asia? Is it a Cordilleran food restaurant or an Asian fusion restaurant?
Hello, William! They sure are! Mouthwatering, I mean. I think Chef Harry is looking to serve an Asian fusion menu together with the highland greats, but while they’re starting out, he started with Cordilleran dishes. Dalikan will add something new as they go.

Dalikan is like Farmer’s Daughter? Sana they opened in another location not near Tamawan. Even Tamawan Cafe servers Cordilleran food.
Hello there, Pauline B.! It does look like that at first glance. I was thinking the same thing too, about them being in the vicinity of Tamawan. Chef Harry will be adding more dishes as the days progress and Asian selections like tom yum, curry, etc. will be some of them. At least, I’m hoping … as we got to taste curry at soft opening and he also does that really well.

Is it very near Farmers Daughter? I would like to visit it soon but I’m a little confused with the location.
