Coming Home to Mama’s Table

Chef Vicky, we’re home! *giggles

We returned to Ambuklao to celebrate Mother’s Day, family, friendship … and also hope for a better country. (“,)

The dining set up at Mama's Table

Since I’ve already given you the juicy details about dining at Mama’s Table,  I’m going to leave this as a photo blog.  Want to read the detailed blog again? Click here.

Photo op(S) in the Tinio garden

While there are similarities to P3+1+1+1’s  first private dining experience to this return visit, there are also new things we took away from meeting Chef Vicky Tinio Clemente again. (because of the differences in the mealtime which was lunch, there were more of us with everyone near and dear to our hearts joining in on the celebration and so on.)

Mama's Table board of bread, crostini, chicharon, lime Tostitos, pate foie gras, artichoke mozzarella & parmesan spread, semi cured tomato w/chorizo, smoked bangus mousse, chili con carne

The appetizer board. =)

Mama's Table amuse caramelized onions with sauteed mushroom, gruyere cheese and truffle custard baked in the eggshell served with anchovy buttered finger toasts

Amuse … and so we meet again.

Mother’s Day 2013 was the day before the election thus our celebration of hope for a better Philippines, too (I wonder if that worked… hhmmm).  Here’s Chef V endorsing her pick for the Senate. *hihi

Mama's Table soup squash and singkamas soup with caramelized pumpkin seeds and fresh tarragon

Soup. Preparing my jaw and mouth muscles for the chomper marathon. =D

Intermezzo 1. Just what Karla wanted a repeat of … Ohh, Chef Vicky and Karla, great minds think alike moment =D

Mama's Table seafood seared baramundi on asparagus served Grenobloise style w/lemon supremes, lemon zest, parmesan croutons, fried capers and chives with brown butter parsley lemon sauce

Seafood. Another crowd favorite. Why is it when Chef VTC preps it, I like seafood? =b

Taking a break from the table that the chef ensured would keep our taste buds engaged every single moment, Karla and I went behind the scenes.  In the kitchen where all the awe striking dishes came from, I got a copy of our menu.

Mama's Table menu

Just some of the tricks up Chef Vicky’s sleeve. ^^, Thank you for this, Chef. Sure beats committing everything to memory. *heehaha

While we were there, our resident chef didn’t miss the chance for a photo op with Mama’s Table’s resident chef.

P3’s resident chef rubbing elbows with Mama’s Table’s owner and chef. Weee! Kilig for Karla!

As we were at the table.  We resumed with the fifth course.

Intermezzo 2. You can bet, I’ll leave you as a clean spoon again.

Mama's Table meat course shepherd's pie with seared tenderloin, buttered corn kernels, mashed potato and mushroom red wine jus served with roasted red pepper pod with steamed French beans and a fan of snowpeas

The meat course. My first actual experience chowing down on a piece of meat cooked medium rare. It was surprising getting to the middle to see it pinky red. It wasn’t bad. Just what Chef Anthony Bourdain described it to be .. melt in your mouth meat. But … I’ll never do that again (if I can help it … unless maybe it’s kilawen). *snickers

Mama's Table digestif romaine, greens, watercress and arugula with orange supremes, almonds and dates served with citrus honey and mint vinaigrette

Digestif. Wonder of wonders. It really takes all the tummy fullness from the previous courses away. After I was done with this, I was ready for another eight courses. =b

group photo at Mama's Table

Group photo! We were all so engrossed in the food, the conversation and the company, we didn’t take any per course.

Mama's Table dessert creme brulee with strawberries and chantilly cream

The last and certainly not the least course of the meal – dessert. I change my mind about eating another eight courses. When I got just a small taste of this, I wanted eight more creme brulees. Oh the fragile sugary glaze  and the milky creaminess under it. Died and gone to heaven dessert!!! (“,)

Another superb group photo. Thank you so much, Kief! Hooray for timers, tripods and multiple shots! \m/

As you can see, our homecoming to Mama’s Table and our celebration for Mother’s Day, family, friendship and hope for a better country went perfectly  (again).  If anything, it was probably even more memorable because we got to share the experience with more of our foodie loved ones. ^^,

(Also, just like how P3+1+1+1 felt in December 2012, we felt blessed. We’ve already been counting our blessings then … and we’re going to keep on counting.)
